Generally a pre-medicals helps to speed up the process, as this would negate the delay of them sending the request, then obtaining the appointment for them, the doc uploading the results and then the VO reviewing them. (Anywhere between 5-10 days depending on which country one applied from)...

This should be ok, the visa officer will understand that the trip is going to be postponed and will issue visa accordingly. (That's why they don't include flight tickets in the checklist documents). You have nothing to worry about.

Medicals are only required for obtaining a visa, so they would need be required till the visa expires and needs renewal. Medical insurance is a mandate when traveling with a SuperVisa. And also it's advisable as the cost of medical treatment is HUGE while your parents are tourists.

The visa would be issued till the date of your passport expiry (if that is less than 10 years i.e.) and SuperVisa is a multiple entry visa.
