Hello, Supporting documents is not necessarily required but good to have. as far as your job duties was mentioned on the company letter head, it's not mandate to send the business cards etc.

I think you have to contact them through case specific inquiry by filling the online form. Al though this is the email address I have received the response from London VO LDNIMMIGRATION@international.gc.ca

No should not be, they have different ways to verify that, like by calling, e-mail, or sometimes physical visit.

Yes the e-mail address is there for both of the references, one of the references mobile number mentioned is changed only. Other wise e-mail address is valid, and they both are presently working in that company. I am talking about the company called 'Infosys' it's a very big reputed MNC company...

My current job is not yet 1 year, this October going to be 1 year. Last employer 2.5 years. If they call no problem, I am ex- employee everything lis egal no problems at all, I have no issue whether they call my current or previous employer, they will be able to get all the piece of information...

Yes, the current job duties matched exactly with the NOC description. Current employer has given the job duties as well.
