As far as I know, you can still apply for another post degree but I don't know the process. Kaybe you need to apply first from the school you are going to have another post degree then process your study permit extension with the new LOA from your new school.

No need for evaluation. You can apply to university/ies you want as long as you met their qualifications. After getting LOA you can proceed with your study permit visa processing.

As far as I know, it really depends on the people from CIC who will be evaluating your papers. Some got 2-3 yrs PGWP and there are some who only got 1 yr PGWP. I think its really a gamble and you really need to take a risk if you really want to push through with that way. That's what I will be...

Remember the SOP is in letter form so you need to write it continuously. You may answer the questions then consolidate it afterwards. Those are just a guide questions on what to put in you SOP that the Visa Officer will look into. Alright, will send you an email.
