I would suggest you to go for an MBA or any other masters degree since you don't want to get a PHD. You will need a strong SOP as to why are you going for a second masters. But, its possible. Many have done it. Going for a diploma/ post baccalaureate is a big no. Very slim chance of visa...

I have a similar doubt. Would be grateful if someone helps me clear it. Though I was paid salary in cash, I have the pay slips. But, if they ask for my bank statements, I wouldn't be able to show them anything. What can be done here?
Chances are pretty low. It all depends on how strong your SOP is. You will need to convince the vo as to why do you intend to change your field of study.

If the name of your institute states that they offer PGWP, then yes otherwise no.
A diploma or certificate is usually considered a lower level than a master's. Why would you want to attend a course with lower credentials than you already completed? You will easily get admitted to the course. It is the visa where you will get stuck.
