Although im not sure whether it would be misrepresentation or not if she anyways doesn't wanna come with you to Canada but the officers would surely ask questions and doubt your plans as to why your wife is not going with you... And you would not be able to add her post ITA...

I guess, for ECA, we are only required to send bachelors degree etc and not the schooling. So, post ITA, do we only need to submit scanned copies of bachelors degree or also the schooling certificates?

Although im not sure, but by logic, as the score decreases, number of people at each point would increase, so doesn't 7-8 point drop seems a little unreasonable to you?

If youre not claiming any points, in my view, it is not necessary to mention the foreign work experience...
