The best option for you will be a DD/Certified Cheque and it is a sure shot method of payment as it is prepaid. but keep in mind that it should be valid for 6 months or more.

Which one is your current company A or C if it is A then no need to show C and show it as unemployed etc. If no it will be hard to prove that you worked for more than 7 years and suddenly stopped working... ;) ;) ;)
