what for? if you are the principal applicant, then YOU are claiming points for your experience. Your spouse has nothing to do with this. You do not even have a space for your spouse's NOC's and duties description in the application.

as a rule a birth certificate as a mandatory document. The guide says that they might consider other documents instead of this one as long as the reasoning is genuine and possible. I have just read that it's not that common to have a birth certificate in India. I do find it somewhat strange...

New Delhi is the capital of India and a place where the Embassy of Canada is located. Therefore, it is the right visa office to be put on your application. I assume there is only one visa office that processes FSW applications in India. Correct me if I am wrong.
