The experiences you do not have the documents for should be included in the personal history section only. Writing unemployed for those periods of time will be a misrepresentation. Include only the experiences you have proper documentation for in the Work History section.

Even though it is not required as per the rules, I suggest you do get a PCC from Saudi for your wife as well to avoid confusion. For home country (assuming it is India), because of the recent rejections, get a PCC from PSK to be safe.

The only thing you seem to be missing is a letter of intent.
