this is a good point jomz. CIC will NOT allow her to sponsor you if she is on welfare. She will be required to show her income (even if it is 0$ she can sponsor you - so long as she isn't collecting). EI is fine though.
Well, your applications get processed separately, so I would advise providing the proof twice. Just print out 2 copies of every piece of evidence, and attach to each.
Not sure you need to contact anyone. You can just work for US clients with their paychecks coming to you from the US and no one will show up and deport you or anything.

As the others have said, could very well be genuineness that they are checking. But, on the bright side, you shouldn't be worried about proving that if you are actually in a genuine relationship ;)
If you can't scan it, it shouldn't matter where it is sent from, as you are allowed to be in Canada with an Outland app, just as long as you are in Canada legally. She's got a visitor's visa, so sounds like everything is fine!
from what i am reading it sounds like they completed processing your PR application. Does it say anywhere that an office will contact you? After completing a PR app, you would be getting a landing interview. Any email from CIC about his? Or this is just whats on the website?
