According the the below link, it is mentioned that the primary applicant (sponsor) should submit Notice of Assessment for the last 3 tax years right before the day you apply - 2018, 2019, 2020.

https://www.cic.gc.ca/english/helpcentre/answer.asp?qnum=1445&top=14

I became PR in Nov 2017 but moved to Canada only in March 2019. For the entirety of 2018 I was in India and my salary Indian salary in CAD was way below the 2018 threshold mentioned in the above link. For 2018, I applied my taxes with CRA (as a Non-Resident) with my Indian Income that got captured under World Income. However, for 2019 and 2020 my salary levels are way above the threshold and that reflects in my NOA as well.

I want to know that if my parent's application gets shortlisted this year, will they reject my application based on my declared salary amount from 2018 ?

Did you apply for PGP in 2020? If you don't meet LICO for all three years, you are not eligible. It will be rejected. It doesn't matter if two years were way above LICO.

Yes, your application would be automatically refused since you don't meet LICO for all three years. This is a mandatory requirement to qualify as a sponsor.

Would add that not only did you not meet LICO you also weren’t living in Canada so NOA2018 would never count.
