Chances of approval depend on your profile and what you plan to study in Canada.

I am 37. Applied for a diploma program which is not relative to my bachelor degree but relative to my work experience. Got refused! I will try again with a post graduate diploma. But I think best option is to apply for a master.
 
Better than someone's who's 40 and less than someone who's 30. Choice of program matters the most.

Applied for a student permit at 35 - for a diploma course that is completely unrelated to anything I have learned in my life. Got approved without any issues. This happened back in 2019. Don't know if things have changed now. I was already in the country on a temporary visa before I applied for the student permit.
