Yes, you can do hotel reservations to self-isolate.
There are no kitchens in hotels, are Canada authorites expecting me to order cooked food every day? I also looked into AirBnb - there are a couple of units with kitchen, but most of the postings are with shared kitchen (I don't want to expose anybody to be infected by me due to using common ammenities)

They will not accept you req only.I had booked airbnb. But when self isolation rule was declared my host ask me to shift to an independent unit with seperate kitchen. She told me she will leave groceries at my door step. And I can not go out.Or meet anyone. This is 25 days back story.

I think while it is "possible" and we should all proceed with caution, I would be surprised if they don't agree to extend COPRs for even those who could travel but chose not to for safety reasons.

As an example, I have a family friend who has delayed her COPR for the last 18 months, citing first pregnancy and then an unwillingness to travel with an infant (before all this Covid madness) and IRCC has continued to grant her requests :| .. so I think its likely they'll do the same for a worldwide pandemic.
Could you pls ask ur frend exactly what process did they follow for extension. He got extension from his hime country embassy or ircc Canada? And in how much time did they give extension.Sorry for so many q.But as u know we r too stressed.Thanks.

yes even i want to know, like how many days prior should i apply for an extension, so even if there is a rejection, i might still have time, to book tickets and then try to manage to go. Although, I just hope they understand the gravity of the situation and grant all of us extensions, as it makes no sense in shifting to another country amidst the virus spreading. It is a burden on their country also. We just wont be able to make it, if their country is on lockdown, no hirings, no jobs for us, no medical coverage. Its just so preposterous.

Most major airlines are accepting bookings in May.

Personally I'm waiting till April 30th to make a decision based on numbers and trends. My COPR is expiring on May 21st.
Just because they are accepting bookings does not mean they are committed to fly. British Airways for example not alone in furloughing 75% of their staff through end May Air Canada much the same plus airlines are parking up majority of their planes which obviously not just a case of starting up and taking to the air again. Seems airlines are betting on starting up sooner rather than later by taking bookings but at this stage seem a long shot they will be starting much of a service in May. I guess all anyone can do is go with what they information they have but have a plan B

Only speculation but doubtful extensions will be granted at an individual level given the potential volume versus across the board maybe for people who could not travel March/April/May/June so through the current emergency order date of June 30th. Even if someone manages to come to Canada it is going to take months or even years for the economy, same worldwide, to recover so yes jobs will likely be more of a challenge but it is what it is and everyone is facing the same.

Just have to monitor the various IRCC and Canadian Government social platforms and web pages.

Really? That long? Then how do I plan for soft landing if I have to
The current still published time for a new card is 13 days plus post but of course the current situation makes it impossible for anyone to estimate how long, Generally with a soft landing unless staying at least a month it would normally be unrealistic to bank on getting a first card in the quoted time, can happen of course but not reliable.

Note there is an ongoing debate on this forum whether a soft landing would be considered essential travel currently by CBSA so be aware of that. They are more likely in the current situation to be sympathetic to someone on a one way ticket planning to settle especially given mandatory 14 day quarantine

Why are IRCC not updating processing times ? Well probably because anything they enter at this point would be meaningless and a waste of time continuously updating

It is what it is unfortunately which is why unless someone has a support network already in the country it is not currently a good time to come to Canada given the quarantine requirement.

I am fine to shift to an independent unit, if there is one available. About groceries - did she buy groceries for you?
