Regarding the documents required for landing, in what form I should provide my proof of fund to the immigration officer? Cash or a letter from my bank in my current country of residence? Thanks.
Are you sure you have to show proof of funds to the officer? They already verified you, so what is the point of checking it again?
Also, @Amir1523 is right, you don't have to bring cash. If you bring cash you have to declare it. Also, if you have a lot of cash and want to open an account in Canada, the bank will check where you got this much money (for money laundry, tax purposes, etc).
If you want to move your money to Canada, you can use SWIFT. Other than the currency exchange rate, they will also charge you a transaction fee, which is not that much (maybe 30-40$). Note also that you may find better exchange rates than your local currency exchange office.
Edit: All in all, since you are landing, there is no issue with brining a lot of money to Canada (either cash or transfer). You can always show your documents and prove that you need money to start your life here.
