Regarding the employment history reference letter. it states that you must provide salary details per annum

For my jobs abroad do i have to convert this figure to CAD or leave it as my own currency?

Also during my time working, my salary changed after 3 months! How to explain change in salary.

what did you end up doing?
You don't need to update it. Keep your annual comp to what it is as we speak. e.g. if you made $60K before and are making $80K now - your letter from the employer would say worked 40hrs/week and their annual comp is $80K. You don't have to explain that you had $60K as a salary 3 months before. IRCC doesn't care.

my only concern would be when they compare my annual salary on the reference letter it wont be the same as the figure in the T4 form for last year.

yes the final pay might be exclusive of bonus lost, employee taking unpaid time off etc...I doubt IRCC will compare all that, as long as you give your at least 3 months of pay stubs (preferably the 3 before your AOR) that match your employer reference letter it should be good.

Payslips/pay stubs are not a requirement. Your case officer can send ADR at best, to which you can respond with a LOE + paystub with increased comp.
