You answer questions in the CRS tool and after answer all questions you will get a CRS score and whether you're eligible to apply for permanent residence in Canada under the Federal Skilled Worker route. You answer questions relating to your age, marital status, language skills, education etc.

You can I apply through express entry. Both you and your wife have an impressive set of skills combined together. You can make her the primary applicant if you can't find your job classification cause teaching is recognized. You can go on cic website to calculate your crs score. http://www.cic.gc.ca/english/immigrate/skilled/crs-tool.asp
Even there you could switch up who the primary applicant will be to see which way you get more points.
After this you need to get both degrees evaluated through one of the chosen eca provides. WES Is most popular cause it's processing time is the quickest. CES is also very good.
Then register to take the IELTS exam.
If either of you have a sibling in canada or have strong french skills you would get more points. (Bear in mind you will have to take a french exam to prove this)
Lastly submit your express entry profile and wait for a draw to receive an ITA. After the ITA you complete your permanent residence application. (At this stage you will need to show funds to prove you all are able to take care of yourself while in canada.)
