My sponsor is my Canadian citizen partner with whom i am in a common-law relationship with... technically I am her dependent as I can't work while in Canada but I have seen conflicting answers as to whether I put her on!

Also, am i supposed to include my family such as my parents who have nothing to do with this in it?? (They're never going to be applying for citizenship...)

No need to put sponsor as a dependant. Also refer to the definition of 'family member' in cic website. It doesn't include parents.

Yes it is Just you.
You won't list anyone else until you get to the IMM5406 "Additional Family Information" form

What happens if you put 2 and include the sponsor who is the spouse in the dependent section? Is that wrong and will the application be returned?

It is wrong. It may or may not be returned, depending on whether the person examining decides it is substantive or not.
