Yes, while not guaranteed, you could always try for an extension. Another thing you could try is to get them a US visitor visa. Have them visit US. That way they could re enter Canada and get another 6 months (provided the visa is still valid). Another option is Mexico.
The funny thing is that the processing time for a visitor record on the IRCC website is about four months. One can apply for an extension of six months at a time, so I guess I'll be stuck in limbo after submitting the visitor record application

please double check how it works out for visitor record but if its like many other situations, then it would be considered "implied status" and your folks would be considered legal and not beyond their legal stay limit until the response is received on the visitor record application.

I hope it doesn't apply to us and I also hope that it doesn't remain like this but per IRCC, average processing time for PGP is now 33 months! I checked it today.

wow! I just saw that too! I submitted my app in October 2023, and 33 month would mean roughly August 2026. Three years, ah!!!

PGP quotas are being reduced and it isn’t an immigration priority given it rarely leads to economic benefit.
true. I find it interesting that the government had annouced that it was pausing the PGPP for some time only to turn around and annouce that they would send invitations to apply in 2025 too.

Any idea of the processing time posted today is applicable to someone applying today or also those who have already applied? say in 2023?

My theory is that Liberals are back in the race for next election and PGP pause would have been a big issue in some ridings. I agree makes zero sense why they would announce a pause and a few months later announce a draw. The backlog of applicants didn’t suddenly change in 2 months.

The new leadership want to woo back voters to the caucus.

Agree look at today’s processing time for the best estimate of your processing.
just to be clear, you are suggesting that today's processing times apply to existing applications submitted in 2023?
