Does a Canadian PR need to stay in Canada while a family class spousal visa application is being processed? If it's possible to leave, how long can I stay outside the country, and would it affect the processing?

Yes, you need to be living primarily in Canada while the application is being processed. Recommend to keep trips outside of Canada to under a month and not to have too many of them. If you leave Canada for too long, IRCC can sometimes say you no longer meet the criteria to sponsor since you are no longer living in Canada.
