So -- I want to apply under NOC 51122, and I meet that criteria, but my education is what's causing me to not apply. Like the area of work vs education shouldn't be a barrier, right?

Why cannot you apply? EE doesn’t require match. What is your selection score?

It's more "will I be wasting money" because of the drastic difference between work and Education.
Right now based of the score calculator, I have a score, with French its about~ 503 and without ~441

Not wasting money as education and NOC do not have to match. Since you have ECA and language scores then include French scores.
