My spouse made a trip few years ago to a country and changed passport since then. So the exact travel dates cannot be remembered.
Should we declare it and add an explanation letter? I fear the application be delayed.

No tickets booking info, no photos and no hotels booking records?
I would still declare it and add a letter of explanation. You should not fear delays; fear accusations of misrepresentation.

Yes, provide a letter of explanation and you won't have any issues.
