I've been living exclusively outside of Canada for the past 9 years, so have not been filing Canadian taxes.

I've requested my 2001 Option-C printout, which is that last year I filed canadian taxes. Is this, along with a statement about having lived exclusively outside of canada, sufficient to replace the most recent year Option C? Or should I provide additional proof of having been employed in the US since then? I have my last few years of US tax returns, as well as a collection of US paystubs and letters from my last job from my bonuses and promotions. Should I include all of these as well, or is that overkill?

Last year's tax returns and the letter from your employer is not overkill. You are trying to prove that you are not in receipt of social assistance or have an undischarged bankruptcy so you are eligible to sponsor. Provide what is necessary to prove that.

It wouldn't hurt to provide copies of your most recent US tax return, along with the explanation for why you have no current Option C. Don't forget that you are required to submit proof of your intent to return and re-settle in Canada in order to be eligible to sponsor a partner.

RobsLuv - that is the part I am most concerned about in the application process. Well, that, and that I don't have a job either here in the US anymore or in Canada yet - I'm applying to UBC for graduate school, but will not have an answer by the time we submit the application. I am including the application that I have completed so far, a letter from my parents saying that they will provide us a place to live when we land, and I will include a letter stating that I am pregnant, and we want to raise our child in Canada - to be close to family. I think I will also include email communication between myself and a realtor here in St Pete, to indicate that we are interested in selling our house, although we have been recommended to not put the house on the market until the visa is approved, so that we don't lose our housing in the event that the application is denied.

I will send a bunch of paystubs, and my last year's tax return as well a a statement for why I am sending an old Option-C instead of a recent one. Hopefully that is sufficient.

Sounds like it will be - and that you have sufficient proof of your intention to re-settle in Canada. What they're guarding against is citizens sponsoring foreign national partners to Canada and then sending them to Canada alone to fend for themselves.
