You don't need an insurance policy for the application. If you don't have one, you can just explain in the application that neither of you have insurance. Keep in mind that doing things at the last minute just for the application can also look suspicious. If you have not financially supported each other, just say so in the application. Explain you both have jobs and do not need support. You can say that you have offered to send her money, but she has refused. If you have proof of that, you could include it. If not, don't worry about it - the visa officer will be able to see that both of you have incomes.
A joint account is a good idea, but again, if you cannot get one, it will not really hurt your application. In any case, getting a joint account just before you send in the application, when you have been together for 7 years, won't really mean much.
