would a job offer help, if I already have a job and a letter of employment?

I am talking about the same employer.
I see some people put in another job offer. Although they already work there and have a letter of employment.
This seems to me unnecessary, but would it make my case stronger?

People put in another job offer when they receive LMIA supported job offer from same or different employer. LMIA supported job offer allows them to claim 600 points for arranged employment in their profile. Being under active employment and only having a letter of employment does not get you 600 additional points.

"Letter of offer from the employer"

Purpose

To confirm an applicant’s qualifying offer of arranged employment, to validate that the applicant meets program requirements, and to screen for concerns of fraud

Document requirements

This document is only required if the applicant claims to have a qualifying offer of arranged employment.
A letter from the employer(s) offering the job in Canada is required:
the letter must be printed on company letterhead and include applicant’s name, the company’s contact information (address, telephone number and email address), the name, title and signature of the applicant’s proposed immediate supervisor or personnel officer;
the letter must include the following details: expected start date, commitment that the applicant will be employed on a permanent, full-time (non-seasonal) basis, job title, duties and responsibilities, current job status (if current job), number of work hours per week and annual salary plus benefits.
The associated Labour Market Impact Assessment (LMIA) number is requested as part of the application.
A scanned copy of the LMIA is not required when submitting the e-APR but may be requested by CIC at a later date.

As I have an LMIA exempt work permit, I will not put in a job offer, as I just continue working where I work now.

It would only make your case stronger if it was a job offer supported by a positive LMIA.
Having a work permit that allows you to continue to work for the same employer (or even a different one) won’t make a difference.
