Check the conditions in your work permit as caregiver, there is an item indicating that "not authorized to work in any occupation other than stated". You can work in other field upon completion of your 3900 hours of work as caregiver and approval of your open work permit.

First of all, You need to figure out what is the exact position the employer is offering you.
It will depend on that what kind of LMO (High skilled, low skilled. etc.) he needs to get for you and what other documents you will need.

It is not illegal to change employers if you obtains proper work permit.
Form is called application to change conditions in Canada as a worker.

Goodluck!

Ps. don't depend on hear say, google the HRSDC website on how to obtain LMO and the CIC website on how to change employers and get a new work permit of different employers.
