Hello,

I'm about to mail my passport and photos to the Consulate General of Canada, so they issue a visa that allows me to get PR at a Canadian port of entry. In the meantime, I have a work permit that is going to expire soon (I'm in Canada). My question is, am I allowed to keep working until I get PR, even if my work permit already expired?

No, you are not allowed to continue working if your work permit expires. You must apply for a work permit extension before the old one expires in order to have "implied status", which allows you to continue to work for the same employer.

Keep in mind that it may take some time before you receive your passport.
