I have full time work experience of 4 years from 2010 to 2014 in the NOC Code 0114 - Other Administrative Services Manager
My query is:
1. Is it ok if I dont have full time experience in the recent 3 years from 2014 to 2017? As fas as I understand, EE needs full time experience of 3 years or above in the last 10 years.

2. I have some part time teaching experience (8 hours per week) as a visiting faculty under NOC Code 4011 - University professor and lecturers. Is it ok to show this experience since it is not in the same NOC code?

3. Should I show free lance or self employed work into Financial Planning, NOC Code 1114 - Other financial officers, to show that I am engaged in some activity since March 2016? I read on CIC website that they need evidence of self-employment income and documentation from third-party individuals indicating the service provided along with payment details. But I dont have any documents to prove this experience or any substantial income from this role.

1 - That is not correct, you need a year of work experience in Canada within the past 3 years to be eligible under the CEC program and a year of continuous work experience within the past 10 years to be eligible under the FSW program.

2 - Yes.

3 - I would refrain from doing this as it is quite troublesome to prove self-employed work experience.

Thanks for your reply. Just want to clarify that I don't have Canadian Work Experience.
I have 3 years of full time experience outside of Canada in the last 10 years.

Yes, for FSW, you need a minimum of one year (and a max of 3 - you don't get more points for 3+ years) of continuous work in the same NOC code in the past 10 years.
