The whole idea behind applying for EE is to show proof of income through work experience now when it comes to the internship whether its in Canada or not you have to show pay slips this is because the government wants you to pay taxes and wants to know the wage break though thats the whole point of work experience under EE, if you're in canada the government knows you through your sin and are able to access your t4 through their system to compare the pay slip to the total amount .In summary the pay slip is something that shows that the amount that you paid is tax deductible. Why?
1) To show that when u come to canada you will pay your taxes once you get a decent full-time job and contribute towards their economy
2) Not end up doing odd cash jobs like selling harmful goods (Don't want to go much further into this...)
Telling a CIC bureaucrat that I did a cash job is like saying I've been paid to do this and that under the table...but does it really mean that I've been working? or just creating job experience without valid proof? it turns your whole file into lies and further questioning? if you have valid proof you're good to go like being on a payroll since all the paystubs are reflected onto the govt system because EI,CPP, Tax are all reflected into this.Otherwise, don't even bother the medium like cheque or cash doesn't matter but the paystub itself is more than enough proof, in simple words, these guys want valid evidence.
Also the way work experience is counted especially foreign is consecutive 1 year, if you did the internship in canada then that rule doesn't apply to you to my belief but you need proof or else you're looking for trouble.
