WILL MY WORK EXPERIENCE ABROAD COUNT?

I’m a licensed professional (dietitian) abroad. If I lodged an application for Express Entry Program, will my work experience be counted under the NOC 3132 (Dietitians) even if I am not a licensed dietitian in Canada?

It will but if you get an ITA, you can‘t practice.

Reference for what. You have skilled experience which is a requirement for EE so assume you have a masters in science or health sciences. What you can’t do is be a nutritionist in Canada until you are licensed.
