I was told by the immigration officer at the airport I could apply for my Off Campus Work Permit after six months because my visa and permit was issued on 1st May. On the other hand, according to my school's immigration adviser I don't need to apply for off campus work permit provided I have my social Security Number. These are contrasting statement, I really need more insight and your help guys.

If you have SIN number then you no big deal. You can work off campus
Immigration officer might have said because you must have landed in may and news rules were confirmed in june 2014.

So now you can work 20 hours/week.

Please can I use my admission letter as 'proof of enrollment' when applying for SIN or the proof of enrollment is a special letter provided by the school I'm enrolled?

u need to get Confirmation to work off campus letter to do that u should get a letter from ur college/university first and use it to apply using Case Specific Enquiry form. please read the link provided.

admission letter does not prove u have enrolled in classes.

"Confirmation that you are a full-time student,"
admission letter does not prove ur a full time student.......

Letter of Acceptance proves that you are full time student. Scan your LOA and submit. (That's what i did and i received my Confirmation letter)
