You MUST notarize photocopies of those douments which are not in English or French.
If you have time and also it doesn't cost you much, then you can notarize photocopies of all documents required to be submitted. It is not mandatory but it will certainly add value to your application.

Another question is, for 2 self address mailing lables - just in case if you don't get a sticky paper somehow, and printed on simple A4, would that be an issue?
Not at all, I did the same and I have already PR visa stamped on my passport.

2 self addressed label doesnot mean paid postage via international courier?
since you said print-out of address is sufficient,does it mean return mail from Immigration office is already charged from us during application filing?
No need to include paid postage or AWB from courier in the package, just self-addressed labels. CIC will post the package via regular post, if required to be which reaches in 30 to 60 days.

I am confused in Occupation field on Form Economic Class. What to write here... Job, Service, Business etc... or my designation and field of occupation? Please suggest
