when does processing of an application exactly begin ?

Hello guys,
when does processing of an application technically begin ? Is it when an application is transfered to a CHC?, when "received by the visa office"? or when application gets update to " in process"?

Trying to calculate months Required to Finalize Applications
Senoirs please share your views on this.
