During your short landing, you can also go to the nearest Service Canada office and get your SIN there with your signed COPR.
You could also look into the health care and driver's licence rules for the province you want to settle in later so you know what documents you need to apply once you get there.
If you know what city you want to come back to, you could get get a feel for different neighborhoods to see which ones are in your price range and what you would like.
Everything else would probably depend on how many days you actually intend to stay after your landing.
Make sure you have an address in Canada where they can send your PR card to. You can either have a friend send it to you or apply fir a travel document before you return to Canada and pick up your PR Card then.
