I am an interenational actor student and my work permit expired in nov 2017, but I just got offerend a huge role in a movie and I am wondering what would happen if I give my SIN number, even though it is expired?

You will probably be refused employment. It's the employers responsibility to confirm that you are entitled to work, and an expired SIN is not going to be acceptable.
