So I got my study permit and I booked my flight from Dubai to Edmonton with a transit in Toronto. What happens in Toronto? Do they give me my study permit in Toronto or does that happen in Edmonton?
Also, what documents do I need and will they interview me at the airport?

Print out your introduction letter. You will get the permit at the airport in your final destination. Show them the visa in your passport and the introduction letter and they will give you your permit.

. You will get your permit at your entry point in to canada as that is where you clear customs. In the OPs case, thst means Toronto as that is where he enters Canada.
 
You will get your study permit in Toronto, that is your first entry point. But I am not sure you will need what type of financial proof. I think someone expert can help you with it.
 
You didnt get your "study permit" yet haha xD You got a student entry visa stamped in your passport atm. You need to show, the letter of introduction, offer letter from university and proof of funds (Tuition and housing payment receipts, cash, etc..) . You will get your permit at Toronto. Make sure you have atleast 2-3 hours of transit time because I heard that the border office queues are very long. Plus you need time to change terminals if applicable.

Haha yes sorry I got confused.
Regarding the proof of funds, I am planning to carry cash (not a lot though, don't want to lose it) and I'll get a copy of my parent's bank statement. Will that be enough? The bank statement won't be in Canadian dollars, though.

Remember to declare the cash, any food items and you may have to show contents on your laptop/harddrive, if you carry one. Illegal downloads is not a good thing so make sure you're clear of that.
