If you can prove your relationship is genuine, these aren't really red flags, especially from the US, where immigration fraud wouldn't be as high. You've been in a relationship long enough and sounds like you've visited multiple times. Red flags in your case would be more like marrying the first time you meet, or never visiting each other, etc.

Does it look like a red flag if we plan to elope? Because we’re both so broke and because we’ve been waiting years to be together, we were thinking of eloping (with some of my family and friends present) then having an actual celebration or whatever later down the road when we could afford it.

No. Eloping would be a red flag where in certain cultures massive traditional ceremonies are the norm. This is not the case with US/Canada. Especially with friends and family present - you're overthinking. You won't have anything to worry about if you can prove a genuine relationship :)

It's normal to overthink in this process, that's what we're here for. Any more questions just ask.
 
You do need to show that you can support yourselves so you can't be totally broke. You don't need to have a ton of savings but wanted to point that out. Assume you have visited each other at least yearly and have pictures. That will be important. Also no matter how small the wedding is take pictures.
 
One more thing to correct. You can legally married as gay in any states of US. It is the law of the land.

Yes, but in some states you have to deal with people like Kim Davis who don't really believe in the law of the land. It would be easier to get married in Canada than in Texas (barring Austin and possibly Houston/Dallas).
