This situation is not new to India, It has always been like that. the best way is to accept that it is going to be that way and look for other proof or other ways of proving.
Canadian Visa office knows the prevailing issue and is able to accept proof by indirect means. what needs to be done is to let them know what and why's of the problems.
when companies advertise for positions similar to yours take a print out and get it notarized or attested. keep your employment letters keep your performance appraisals.
include testimonies by your co-workers. attach names of references who can verify your stories. and most of all pay attention to social engineering.
attach every scrap of paper that company gave to you. let visa office know that company will not discuss roles and responsibilities and this is all you can attach and further verification about your claims could be done by contacting the HR department.
although totally unnecessary as you letter is already treated as an affidavit but get an affidavit made stating the facts of the case and attaching it to the application.
instead of looking only one direction strengthen your case by alternate means. VO's are experienced people and they do exercise substituted evaluation and to be very honest they can very easily identify trouble spots. All you need to do is ask. if you knock the door, it will be opened for you
