I have completed my Express Entry profile with my most recent IELTS scores. Can I update my Express Entry profile and enter the results of an IELTS test which I sit a few months ago (prior to the one I have already place into my profile)?

Yes. Provided the previous attempt was done within the past 24 months. Edit the date and TRF number in your MyCIC accordingly.
