I didn't start my visa process yet.. So its hard to suggest you

You can apply online or by paper application. To apply online you are going to need a scanner, credit card and digital camera.
Choice is entirely up to you.

I guess it might depend on how your visa office works. How ours works here, is that they might ask to see the original documents and have an interview, or they may just issue visas.

But it shouldnt be a problem because you would just have to produce the same documents that you scanned.
