I’m sending my dad a jacket from the UK to Canada — it’s a gift and worth a few hundred pounds.

Can I declare it as $60 to reduce duties? What are the risks if I do? Appreciate any advice, sorry if this has been asked before!

Sure you can but it is illegal. Likely pretty obvious that not worth $60. You may or may not get caught.
