Unless anyone can definitively tell me that I've read the page on CIC's website wrong (http://www.cic.gc.ca/english/immigrate/skilled/eca-conversion.asp) I believe that this allows me to select "two or more certificates/diplomas/degrees" on my EE profile...
No, you can only select "Bachelor's degree or other program", as your 2-year Diploma was earned before your Bachelor and is not a post-grad Diploma.

Where does it say that it has to be a postgraduate diploma (or earned after bachelors)? This is how I read it: (http://www.cic.gc.ca/english/immigrate/skilled/eca-conversion.asp)

ECA assessment results:

A three-year or more certificate, diploma, or degree

PLUS any of the results in the sections below (not including secondary/high school) , or:

Post-Bachelor's Certificate
Post-undergraduate certificate
Post-Bachelor's Diploma
Post-undergraduate diploma
Graduate Certificate
Graduate Certificate with a focus in [area of concentration]
Postgraduate certificate
Postgraduate Diploma
Graduate Diploma with a focus in [area of concentration]
Graduate diploma
two-year Postgraduate Diploma, specializing in [name of discipline]
two-year Bachelor’s after degree with a focus in [area of concentration]
one-year Postgraduate Certificate in [name of discipline]
one-year of graduate study with a focus in [area of concentration]
Dual Bachelor’s degree (four years)

The "sections" that sections below surely refer to these:

Bachelor’s degree or other programs (three or more years) at a university, college, trade or technical school, or other institute
Two-year degree, diploma or certificate from a program at a university, college, trade or technical school, or other institute
One-year degree, diploma or certificate from a program at a university, college, trade or technical school, or other institute

It can't just be referring to the first list, otherwise it wouldn't say "not including secondary/high school".

Looks like you are correct. It does seem that as long as we have a three-year diploma/degree, we can use any other Diploma to claim the "Two degrees" option.
