And IRCC changed the entry date on the TRV to a few days later? This is the issue. OP has a TRV so IRCC doesn’t need to respond. IRCC doesn’t care when you want to travel. IRCC decides.
Is it there no other way? Perhaps extending it or something? As much as I want it, I'm really in no position to change the travel dates earlier due to my work situation.

You can raise a webform and ask but IRCC decides your dates of entry. You have a TRV so applying when you have a valid one may not even be considered.
 
The thing is I can't just change it. I still have a job to come back to and my approved leave is July 8. That's why I specified in my application. So there's really nothing I can do about? Should I just reapply for a new visa?

Apply for reconsideration. Send in a webform indicating the date of TRV expiry and that you had specified that your ticket was for a certain date yet given a TRV that expired a week earlier. I would ask for a TRV expiry date at least a week after your plane ticket to account for any flight delays. I would also consider contacting the embassy in your home country. The big issue is that it may take around a month to hear back from someone.

Your bf can also contact their MP to see if they can get your TRV expiry date changed to soon after your flight date. It is a very minor change so is a reasonable request. Your bf should get a reply from their MP about whether they are willing to contact IRCC within a week or two

Hello. I just wanna share a little update.
I sent a webform and IRCC got back to me. I got a new TRV now and it will expire in Oct 2023. All is well. Thank you all.
