How long is a piece of string?
Unfortunately no one can honestly answer that because it all depends on your personnel circumstances, relationship and whether or not the immigration officer believes you have a genuine relationship with your partner.

It doesn't matter where you come from, the most common reasons for refusal include the sponsor is in receipt of social assistance, is bankrupt or is in default of a previous sponsorship agreement; or Immigration Canada believes that the marriage may be one of convenience.

It happens very rarely. It's also rare for U.S. nationals to be interviewed. Rare is not the same as impossible. Buffalo in general has among the lowest refusal rates of all VOs. The grounds for inadmissability are not limited to being found to not be in a genuine relationship by the way. You can also be found inadmissable for criminal, security, and medical reasons, for misrepresentation, for not being a member of the Family Class, and if someone else being sponsored by your sponsor at the same time, such as a dependent, is found inadmissable. For example, I believe that RobsLuv was initially denied because of an inadmissable child (has since appealed and won).

It's also not that common that sponsorship undertakings are not approved, from my observations. If the sponsor candidate is found to be ineligible to sponsor, CPC-Mississauga would reject the sponsorship portion and I believe that most people check off, "withdraw your sponsorship application. All processing fees less $75 will be refunded," in IMM1344. I know I did. In the event they check off that they want to continue with the second portion of the processing, the sponsorship guide states that, "The visa office will likely refuse the application for permanent residence and inform you in writing of your right to appeal." Again, the combination of sponsor refusals being low and checking off to continue with the application in the event of a refusal being low (in my humble opinion) means being refused by the VO because of the sponsor not too common.

If your spouse is approved as sponsor and you have no criminal background, it is unlikely that you will be turned down. Their two biggest fears are that you will be a criminal or a ward of the state. Your sponsor promises to keep you off the dole and if he/she seems financially stable (not necessarily wealthy, just employed and solvent) they will probably be approved. The background check will determine your legal status. An interview is unlikely.

As an American citizen with a Canadian spouse, the process is basically a series of hoops you have to jump through. Jump through the hoops and you get your visa.
