tourist visa and Independent Contractor or Consultant

I am french and I am in Canada on a tourist visa.
I would like to know if I can be hired as a Consultant or as an Independent Contractor ?
If I have my own french company, can I be hired here in Canada as a Consultant but with a canadian tourist visa ?

Can I create a company here in Canada to be hired as a consultant ?

NO you cannot be hired as a consultant, paid or unpaid by any company with a canadian tourist visa. YES you can create a company here but still you CANNOT be hired or work in your own company paid or unpaid with a visitor status. only Canadian citizen, permanent resident or a person with work permit can work in your company.
