Total expereince or required experience is sufficient

Hello Friends,

I have total experience of 12 years in that last 8.7 years I’m working in a MNC where my NOC fall under 2171, from my current employer I can get the reference letter stating my role and duties.

My questions are,
1. A reference letter from my current employer is sufficient or I need to get from previous employer also?
2. I'm already in higher slab in work experience > 6, so why I will unnecessarily share my previous employer reference letter?

It's just that CIC's checklist says "letters of reference from all your employers for the past 10 years". I'd rather comply with their requirements.
