Visiting a girlfriend is something a lot of people do but maybe only for a couple of weeks at a time, having a return ticket and maybe travel insiurance for the specific trip period shows intent to return but people do if inclined (not saying thats your plan) discard the return part. Owning a car with insurance might be of limited value to demonstrate any intent to return but if thats all you have and are even asked to show intent might help but doubt it as a car is not exactly a fixed asset.
Nobody here other than some general advice can guarantee what might happen next time you visit other than to say be honest with CBSA and only answer questions asked , do not volunteer information, be positive with no hesitation with answers as CBSA will have details of your last visit in front of them. You have some advantages being Irish and visa exempt with a return ticket so assuming asked about your employment status convincing CBSA how you will support self on the visit might be the deal breaker resulting in a shorter visit.
