Hey rosa85, and welcome to the forum!
1 - you can ask for an extension of the tourist visa before it expires, like a month before. For the reason of extension, you can put a copy of the sponsorship approval letter, and explain that he is waiting out his PR in Canada, there is no reason to be denied normally. And - as long as they are processing the extension, your husband can stay in the country, so that should be enough. Another option is to go out of the country ( to the US if you are close to the border), and when he comes back in, he can ask for another 6 months entry stamp. Bring the proofs of the PR application (approval letter).
2- ecas can be found here https://services3.cic.gc.ca/ecas/security.do?lang=en and you should use either the UCI + sponsor information ( no first name, only last name) or the file number (starting by F) and the applicant info. BOth can be found on the approval letter/email.
3- IF an interview is required, then your husband will have to fly to London at a date decided by London VO. Interviews are quite rare for visa-exempt applicants, and if you have a "straightforward case" (first marriage, being living together, no previous history of sponsorship etc), then it is unlikely that he will be asked for one.
If you feel like it, you can add yourself to the London spreadsheet, the link is in my signature, and it's open for all to edit. Add yourself by date of sponsorship received (29/11), and the color for the user name corresponds to the month you submitted your application.
