I don't think the U-Haul idea will work. I believe you need to have a quarantine plan at the border i.e., show hotel bookings and stay there to take the PCR test. Unless circumstances have changed, and someone here can correct me.

I can quote from FB group (Canada citizenship test - search term "airport") that someone was in same situation and she followed proper quarantine requirements, even after the test she decided to stay in Canada and luckily she got an interview request (one quote from her post: officer asked 3 times if she's in Canada).

If it was asked 3 times then it must mean they have all the entry/exit record on their hand

Keep in mind if you are just stepping in and out for the test, you will have to come again for interview and come again for Oath.

So U-Haul × 3.

We will plan to stay for as long as it takes and maybe a little more since summer is coming.

Actually one is not required to quarantine in a hotel if entering Canada by land. This is clearly stated on the government of Canada websites. But a quarantine plan is required. PCR tests are administered at the border and they give you another kit to take home for day 10 of the quarantine.
