We began our application for PR sponsorship with an immigration consultant but have decided as the case is getting more complex we’d like to have a lawyer. How do we switch representation and do we need to inform the consultant of this?

Hire a new rep. Inform the old one (check your contract for how this is done). Inform IRCC of change of rep. There's a form, I think just the same one used initially.
Your new lawyer has to take care of everything. All you need to do is sign where he tells you to sign...that's the point of a LAWYER - you hire them, go to sleep n when u wake up u have a Visa.
