1. Is it mandatory to renew insurance coverage after one year ?_Not really_however you want to ensure they have the coverage otherwise you will be doomed.
2. If yes, can i buy insurance less than $100,000 in coverage ?_Sure go with 50K
3. Does it have to be through Canadian insurance providers or can i shop outside Canada ? you can shop anywhere as long as it's a canadian registered company it's easy to handle the claims within canadian system rather than looking abroad policies.
Q4...
this is what I have found from TurboTax site..

he care giver tax credit is only available if your mother depended on you due to mental or physical infirmity.

If you are married you cannot claim her as a dependent ie equivalent to spouse credit.

Now if you are eligible under one of those two situations. your question is about residency. I think being here on a super visa would be considered residency rather than visiting but you should probably call CRA to get clarification.

Caddboy 2 years ago Reply Actually they need to meet the criteria stated below: my mother was born in 1948.

- been 18 years of age or older at the time he or she lived with you;
- had a net income in 2013 (line 236 of his or her return, or the amount it would be if he or she filed a return) of less than $19,824; and
- been dependent on you due to an impairment in physical or mental functions or, if he or she is your or your spouse's or common-law partner's parent or grandparent, born in 1948 or earlier.

Only possible flaw is that once parents again apply for super visa(second time). Canadian embassy ask for proof valid insurance during their stays on expired super visa

Ok. I found the answer.. hope this will help to all...

One must maintain $100,000 of coverage at all times. When you are extending your stay you need to have converge until the day you are in Canada.
