Hi,

I have completed my Masters degree after which I have around 8 years of work experience.

I am willing to pursue my studies further either by taking up a adv diploma, Masters or Phd program.

If I am accepted by the universities then which work related documents could they ask me for submission ?

Also..which work related documents can be asked by the visa officer if I am accepted by the universities ?

For admission to the university, you will need to provide references. For good universities these are done online (you provide your chosen referees, incl you current supervisor's, official email addresses and they are emailed the recommendation form). For some, these can be done through paper but usually accompanied by referees' business cards.

For visa admission, it really depends on who is your sponsor.
-If you are your own sponsor, you will need to show ITR, Salary slips, work experience letter/certficate etc to show source of income.
-If you are not your own sponsor, you will have to show your sponsor's employment documents to validate his/her source of income.
 
Since the gap after your education is considerable, you should attach you work related documents even if you are sponsored by someone else. Otherwise you should expect to be responded that VO is not satisfied that you will leave Canada at the end of your stay, considering:
-your current employment situation

If your case is otherwise strong, then he might not refuse but ask for employment documents (they don't specify which ones) along with the medical call.

In the case you are sponsored by someone else, your employment/work experience certificate may be sufficient (no need of tax returns and payslips)...But if you are your own sponsor then you must show the proof your income through your tax returns and payslips
